Meet Chef Claud

Opened in 2015, Bacchus Kitchen + Wine Bar in Pasadena combines eclectic seasonal menus, live music, and a curated selection of wines to create a unique dining experience, all under the visionary leadership of Chef Claud Beltran. Known for his inventive New American cuisine, Claud is a native Pasadenan(or Pasadeño) whose "por que no?" attitude translates into unique offerings from artfully-crafted small plates & winemaker dinners, to teen cooking camps & professional catering services.

After a traumatic week, we’ve been struggling with the existential crisis that the devastation of our community has left us with. “What do we do?” “How can we help?” “Why were we spared while so many other businesses and homes were not?” “Is there enough wine in the world to get us through this?”

So many of our friends & regulars have lost so much and we’re just trying our damnedest to navigate a path forward and find ways to help as our Altadena/Pasadena community grieves and begins to clean up & eventually rebuild. And let’s be honest - we’re not really sure what that looks like or what lies ahead. How does a neighborhood restaurant keep going when such a large part of our neighborhood is gone?

Well folks, what we DO know how to do, is bring people together with incredible live music, some comfort food and maybe even a little wine. Or a lot of wine. And while it may seem slightly tone-deaf to move forward with a jazz concert so soon after the events of last week, we consider it our Act of Service to show love for our community - a night of music that can provide some healing & togetherness & a few hours of “normalcy”. That’s the spirit of Bacchus.

Brandon recently returned from a trip to Asia, and was struggling with what gift to bring back for Chef Claud. This bottle below caught his eye, as its name personifies Claud himself: “L’Esprit de Bacchus”.

*And yes, only Brandon would go to Asia and bring back a bottle of wine from France.

The show goes on. This week, Bacchus’ Kitchen marks 9 years of business. Operating a restaurant is not for the faint of heart. A restaurant is an ever-evolving work of artistic expression, constantly at odds with the economic and financial parameters it’s forced to play within, whose daily execution relies on like-minded individuals who have all been blessed (and cursed) with the “Hospitality gene”. And not unlike wine, some vintages will be better than others. There will be some euphoric highs and some sleep-depriving lows. There might even be a pandemic! But if you’re lucky enough to be surrounded by a team and community who will somehow support the vision and communal spirit that you envisioned when starting out, you find a way to weather any storm.
